A farm, a family

Longon and La Prairia represent the life of an ordinary family of shepherds, cheesemakers, and refuge keepers.

Cows, goats, and sheep, milk and cheeses, are the pillars of our farm. Located in the village of La Roure, in the heart of the Mercantour, between terraced meadows and mountain pastures, we raise our animals to the rhythm of the seasons, from the stables to the pastures, and make our cheeses daily.

Between Tradition and Modernity

Coming from farming families for generations, we raise our animals on the pastoral lands of the municipality of Roure in the Tinée Valley, between 800 and 2200 meters above sea level. Milking is done every day, all year round, to produce the three types of milk: cow, goat, and sheep, according to the seasons. The milk is transformed into cheeses as well as dairy products, such as cheese molds, curds, white cheese, and also the Lait de lune©, a unique fermented milk.

For over 25 years, a family, followed by its children, has lived in tune with their herds, with authenticity and simplicity.

The Wolf

The wolf is omnipresent in our daily life as shepherds. It appeared in the Alpes-Maritimes in 1992. It is here, watching us, guarding us. We rarely encounter it. Then, one day, it strikes. Predation is random. The slightest mistake, flaw on our part, animals that isolate themselves and don't return to the shelter at night, and the wolves attack. Finding the killed animals to make the compensation report is not only mandatory but also time-consuming. Protection dogs, GPS, guards, and night pens are not enough to limit predation; the wolf adapts much better than our goats, sheep, calves, and cows.
